Pecan Sandies

Pecan Sandies are nothing fancy, but they are buttery, slightly sweet, and just perfect with tea or coffee. Which makes them appropriate any time of day!

Ingredients
  

  • 1 cup butter at room temperature
  • ½ cup powdered sugar
  • 1 teaspoon vanilla
  • cup flour 1:1 gluten-free blend works well
  • ¾ cup finely chopped pecans
  • ¼ teaspoon salt
  • powdered sugar for rolling the sandies in

Instructions
 

  • Heat oven to 400°F.
  • Mix butter, powdered sugar, and vanilla. Stir in flour, nuts, and salt until the dough holds together.
  • Shape into 1-inch balls.
  • Place about 1 inch apart on a parchment-lined baking sheet.
  • Bake until set, but not brown, 10-12 minutes. Let cool slightly, then roll in powdered sugar. Let cool completely, then roll again until well coated.
