Pecan Sandies are nothing fancy, but they are buttery, slightly sweet, and just perfect with tea or coffee. Which makes them appropriate any time of day!

1 cup butter at room temperature ½ cup powdered sugar 1 teaspoon vanilla 1¼ cup flour 1:1 gluten-free blend works well ¾ cup finely chopped pecans ¼ teaspoon salt powdered sugar for rolling the sandies in
Heat oven to 400°F.
Mix butter, powdered sugar, and vanilla. Stir in flour, nuts, and salt until the dough holds together.
Shape into 1-inch balls.
Place about 1 inch apart on a parchment-lined baking sheet.
Bake until set, but not brown, 10-12 minutes. Let cool slightly, then roll in powdered sugar. Let cool completely, then roll again until well coated.
