I love to keep different types of mixed salads on hand for quick lunches and snacks and chicken salad is one of my favorites. This Honey Almond Chicken Salad is my version of the one I like to pick up from the deli at my local grocery store. It sure is nice to make it at home with leftover roast chicken and with such few ingredients.
2½cupschicken, cooked and dicedI like to use leftover roast chicken!
½cupcelerydiced small
½cuponiondiced small
⅓cupsliced almonddiced small
½cupmayonnaise
1Tablespoonhoney
2½teaspoonslemon juice
Instructions
Put the diced chicken, celery, onion, and almonds in a bowl and stir to combine.
Mix the mayonnaise, honey, and lemon juice together in a small bowl and pour over the chicken mixture. Stir to combine.
Serve on toasted bread as a sandwich topped with tomatoes and lettuce. Put a teaspoon of chicken salad on cucumber rounds. Eat with crackers.Put chicken salad in a lettuce leaf.
