Franklin-inspired BBQ Sauce

Aaron Franklin is an icon in the BBQ world so when I was looking for a classic barbecue sauce, I knew to look to him for inspiration. This Texas-style, Franklin-inspired BBQ Sauce is just about perfect. There are several versions of his recipe on the internet and I suppose I'm adding to the collection!

Ingredients
  

  • ½ yellow onion diced
  • 4 cloves garlic chopped small
  • oil for sauteeing
  • ½ cup apple cider vinegar
  • 2 cups ketchup homemade or organic
  • 1 Tablespoon brown sugar
  • 3 Tablespooons Worcestershire sauce
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • salt and pepper to taste
  • 2 teaspoons Dijon mustard

Instructions
 

  • In a medium saucepan, saute the onions over medium heat till they are soft, 8-10 minutes. Add the garlic and cook till it softens, about 30 seconds.
  • Add the apple cider vinegar, ketchup, brown sugar, Worcestershire sauce, and Dijon mustard. Stir to mix and cook until the brown sugar is dissolved.
  • Add the chili powder, paprika, salt, and pepper. Cook until the sauce is the thickness that you want.
  • Transfer the sauce to the jar of a blender and blend until smooth.
